I love this soup! Very simple to make, and ready in 20 minutes. It's full of fiber and packs a ton of flavor
Serves 4
1 tablespoons olive oil
1/2 yellow onion, diced
5 clove garlic, minced
6 cups vegetable (or chicken) stock
1 can white beans (cannellini or great northern), drained and rinsed
1 can pinto beans, drained and rinsed
1 can black beans, drained and rinsed
1 can garbanzo beans, drained and rinsed

As I've been watching the coverage of what has been happening in Texas after Hurricane Harvey, I feel saddened for all these people losing their homes and all their belongings.
It reminds me to not take anything for granted. We are all one and live in this world together.
