Food does not have to be complicated, who has time for that?
There have been many nights when I would come home from work and too tired to cook as I felt it would take so long to get a nice meal together. Now, knowing how important good nutritional food is, I make the time to eat a nice meal. I like to keep it simple and whip up something quick while knowing its nutritional value. Yes, it can be done! I often refer back to the basics: a lean protein, vegetables and a small portion of whole grains. If I stick to that, the rest is simple.
This salmon deal is perfect for lunch or dinner.
Recipe (Serves 2):
2 pieces of salmon
2-3 cups of vegetables (these can anything you like such as peppers, asparagus, or zucchini)
1 teaspoon coconut oil
1 cup of cooked quinoa
Lemon, parsley or cilantro, salt and pepper
Preheat the oven to 375F and place salmon on a baking sheet lined with parchment paper. Squeeze lemon juice, salt and pepper on fish. Cook for 12-15 minutes.
While fish is cooking, heat a medium frying pan over medium heat. Add coconut oil and toss in vegetables. Cook about 10 minutes or to your liking. Add stock or broth if needed.
Place 1/2 cup quinoa on a dish and top with salmon and vegetables. Serve with lemon wedges and herbs if desired.
