I work hard to avoid sugary snacks, but one thing I cannot do without is dark chocolate. Normally, I will have a small piece every day, but sometimes it's good to change it up. If you are like me and need a hint of sweetness, but don't want to pile on the pounds with sugary snacks, you'll enjoy this dark chocolate bark. Dark chocolate is good for heart health, overall cholesterol levels and is rich in antioxidants. I used an Omega-boosting trail mix for this recipe but you can use any assortment of nuts and fruit. Enjoy!
1 pound dark chocolate
(at least 70% cacao, I use Trader Joe's Pound Plus 72% cacao dark chocolate)
1 bag of trail mix with nuts and dried fruit
(I use Trader Joe's Omega Trex Mix)
Pour water into a small saucepan, and place a glass bowl on top, to create a double boiler. Add chocolate into the bowl, and boil the water so the chocolate can melt. Once melted, pour onto a large cookie sheet with parchment paper.
With a spoon, spread the chocolate around to create a rectangle on the pan. Next, pour the trail mix onto the chocolate. Place into the refrigerator for at least 2-3 hours to cool and harden.
Later, break apart the bark into bite-size pieces and store in a cool container in the refrigerator until ready to eat.
