Every year, I used to head over to McDonald's for a Shamrock Shake on St. Patrick's Day. Now knowing how much sugar is in one of those (more than 85 grams in case you didn't know), I avoid them and have created a much healthier version. The kids love this one too! It doesn't have to be just on St. Patrick's Day, this shake can be made year round. Enjoy!
2 cups milk of choice (I use almond milk)
1 tsp mint extract or 2 tbls of liquid chlorophyll (I love using Nature's Sunshine Liquid Chlorophyll, it's a natural detoxifyer and boosts your immune system, plus has a refreshing mint flavor)
2 tsp vanilla extract
¼ cup maple syrup (or use can use honey)
1 cup raw spinach, packed
4 cups ice cubes
Coconut Cream (optional):
One can of coconut cream
1/4 cup powdered sugar
splash of vanilla extract
In a blender, mix all the ingredients together to turn into a liquid. If you need more mint flavoring, add additional mint leaves.
For coconut cream, chill can of cream overnight in the refrigerator. Empty can of cream into bowl and blend until smooth. Add powdered sugar and vanilla extract, and continue to blend under the cream becomes light and whipped (about 3 minutes). Serve immediately or store in refrigerator for about 2 weeks.
